1、准备食材:梨子、麦芽糖、冰糖。

根据冰糖的纯净程度,市面上所售卖的冰糖一般有透明和黄色这两种品种,而透明的冰糖会比黄色的冰糖要贵一些,就是因为其中的杂质少一些。而在熬一些粥或者是美容养颜补品的时候,一般都会放入冰糖熬煮,例如冰糖银耳就是使用到的冰糖。在使用冰糖熬煮的时候有一个弊端就是非常不容易融化,怎样把冰糖熬成糖汁呢?

100克冰糖先用微波炉加热20秒左右 加热后的冰糖很容易就掰成小块了。碎冰糖加50克凉白开,放入厚底的小锅小火加热至糖完全融化,期间不停搅拌加入半个柠檬的柠檬汁(柠檬籽不要掉进去,冒着泡不好捞)。等到糖全部融化再加50克开水,加完会冒大泡泡,耐心看着火不停搅拌。

 

等到泡泡变小、颜色微微发黄就可以关火了。如果糖浆的颜色变成深黄色,这时候关火倒出来就变成固体能拉丝的糖了,这样的糖汁是不合格的。要记住糖浆非常非常烫,一定要选可以耐高温的容器来放。如果熬得太浓了可以重新加一点热水,重新把锅烧开后搅拌至融化,再到冒泡就关火,你的补救糖浆就好了。

 

冰糖由于较容易吸水受潮,因而应放置于阴凉通风处。如发现冰糖受潮出水,可以用电风扇吹干或置于太阳下暴晒到干燥为止。如发现冰糖表面出现化水现象(即比较粘)最好不要食用,由于家庭不便于处理且容易滋生细菌。

1、咖啡核桃糖

材料:

核桃仁350克、芝麻30克、白糖170克、麦芽糖200克、葡萄籽油20毫升、即溶咖啡粉1勺、食盐1克

做法:

(1)将核桃仁掰成小块,入烤箱烤脆,芝麻炒或烤熟,晾凉备用;

(2)锅中加入约20ml 油,小火烧热,加入白糖及少许盐;

(3)小火熬,不停搅拌至全部融化,并呈琥珀色,倒入麦芽糖,不停搅拌;

(4)待搅匀后加入1大勺即溶咖啡粉,快速搅拌;

(5)马上加入核桃仁和芝麻快速翻拌均匀后离火,倒入大不锈钢托盘中;

(6)趁热压平,待其冷却后切成条状即可。

2、香橙果酱

材料:

麦芽糖40克、橙子500克、冰糖100克、食盐适量

做法:

(1)橙子洗干净,切成四瓣,把果肉取出,放入料理机内打碎;

(2)过滤掉汁液,留下浓稠的果肉待用;

(3)锅内加入适量的水、冰糖煮至冰糖融化;

(4)加入果肉、少许食盐煮至粘稠,冷却后装入瓶子中。

3、江米条

材料:

糯米粉350克、麦芽糖95克、食用油适量、糖粉适量

做法:

(1)准备好麦芽糖和糯米粉

(2)麦芽糖取出放入盆中,加入开水210克化开搅匀

(3)放入糯米粉,先揉成面团,然后用擀面杖擀成薄片,切条;

(4)冷锅下油下切好的小条,随着油温慢慢升高,小条会慢慢浮起直至金黄;

(5)捞出后撒上糖粉拌匀即可。
